A proper spiced chai blended in-house from Assam black tea, crushed cardamom, cinnamon bark, fresh-ground ginger, black pepper and a few cloves. Strong enough to stand up to milk and sugar the way chai is meant to be served.
Simmer two teaspoons with equal parts water and milk for five minutes, sweeten to taste and strain. Each tin makes around 40 cups.
