Stone-ground first-harvest matcha from Uji, Kyoto. Shade-grown for three weeks before picking, the leaves develop the vivid green colour and deep umami that separate ceremonial grade from culinary powder. Smooth, sweet and creamy with no bitterness when whisked properly.
Sift one gram into a bowl, add 70 ml of water at 75 degrees C and whisk briskly in a W motion until a fine foam forms. Also excellent as a latte over oat milk.
